You may have seen on my Insta/Snapchat that the other week I was invited to a champagne pairing dinner at Celebrities, in the Royal Mirage, hosted by Le Clos and Billecart-Salmon.
Well, this week I finally got round to editing and uploading this post, swooning over the memory of the opulent dinner set up, mouthwatering food and crisp, vintage champagne.
Founded in 18181, by husband and wife Nicolas François Billecart and Elisabeth Salmon (hence the name Billecart-Salmon), it is one of the few champagne houses to still remain family owned. Gold curtains, glass chandeliers and fresh flower centre pieces in the private dining room of Celebrities set the scene for our four course meal. Chef Laurent Michel matched five different vintages of Billecart-Salmon champagne to each course of our meal – a Brut Réserve on arrival, a Blanc de Blanc with our scallop appetiser, a Brut Rosé with our lobster starter, a Cuvée Elisabeth (named after the founder) for our slightly phallic looking, but extremely tasty chicken and truffle main, and an Extra Brut with our poached pears and cream dessert.
